Menu Monday’s
Today is going to be called menu Monday’s because I am planning on posting a new recipe every Monday. As you already know I truly love to cook and create new recipes, so most of these are my originals or recipes I have improvised to suit me, feel free to do the same. I will admit that I am not one to use measuring cups when I cook, so some I am guessing on the measurements, because I am a throw it in kind of cook. Bare with me if some of my recipes say a little of this or that….and I sometimes just make stuff up as I go, with what I have at home, so don’t be afraid to just say no if it sounds really strange…Hope you all enjoy!
Stuffed bell peppers
1 can black beans, drain and rinse
1 cup rice
1 medium onion
¼ cup fresh cilantro
4 large bell peppers, cut in half and remove seeds
1 large tomato
1 garlic clove, smashed and diced
Add desired meat, chicken, hamburger, sausage or eat as a vegetarian meal
Pre cook meat and rice, mix all ingredients together, place peppers on sprayed baking dish, spread lightly with olive oil, salt inside peppers then stuff peppers with mixed ingredients ,bake at 350 degrees for about 15-20 minutes and Enjoy!
